Recipe inspired by Cincinnati Chili.
Ingredients:
> 1 pound ground sausage
> 1 white onion, chopped
> 1 bell pepper, any color, chopped
> 1/2 tablespoon minced garlic
> 2 tablespoons dried parsley
> 1 teaspoon smoked paprika
> 1 teaspoon cayenne pepper
> 1 teaspoon salt
> 2 cans drained and rinsed red kidney beans
> 1 can drained and rinsed white northern beans
> 24 ounces crushed tomatoes (these can be canned; I puree fresh tomatoes)
> 1 10 ounce can Rotel HOT diced tomatoes with habaneros
> Spaghetti noodles, cooked
> *Optional* 4 chopped green chile peppers (if you like very spicy food)
> *Optional* sour cream & chives
> *Optional* fresh grated parmesan and/or cheddar cheese
Directions:
> II use a Dutch Oven for this meal- place on your stovetop on medium heat. Add about a tablespoon of butter and let it melt.
> Cook garlic, in butter, until fragrant.
> Add sausage, onions and bell peppers over medium high heat and sauté until onions are translucent and meat is cooked. Salt generously while cooking.
> Add parsley, paprika, cayenne, salt and black pepper. Mix thoroughly until all spices are incorporated.
> Add all beans, tomatoes, tomatoes with habaneros, and chile peppers (if you chose). Stir to mix together, reduce the heat and let simmer for about thirty minutes. Cut the heat altogether and let sit for another hour.
> Taste test and add more salt if needed.
> Serve over rice, or if you want to eat it my favorite way, serve it over spaghetti noodles with fresh grated parmesan and/or cheddar on top! (Cincinnati style- no, I'm not from Cincinnati, I just really like the idea of serving chili over noodles- brilliant!)
* Pro tip- add a dollop of sour cream & some chives on top of the final product.
