I've always wanted to create a brownie that tasted like it was from a box, but that wasn't actually from a box. Behold, we have found the one!
Ingredients:
> 4 large eggs
>1 1/4 cups Dutch-process cocoa (I have to get mine off Amazon)
>1 teaspoon salt
>1 teaspoon baking powder
>1 teaspoon espresso powder (I use Cafe Altura instant coffee mix)
>1 tablespoon vanilla extract
>16 tablespoons butter, melted
>2 1/4 cups sugar
>1 1/2 cups flour
>2 cups chocolate chips
Directions:
> Preheat the oven to 350. Grease a 9x13 pan.
>Melt the butter in a saucepan, and once melted, add the sugar in and stir until dissolved. Set aside.
>Whisk together the eggs, vanilla, cocoa powder, salt, baking power and espresso. Whisk until smooth.
>Add the the butter and sugar mixture to the egg mixture, and whisk thoroughly.
>Finally, add in the flour and chocolate chips.
>Bake at 350 for about 25 minutes- it's hard to tell with brownies because the toothpick trick won't exactly work... I find 25 minutes to be perfect!
