Creamy Sausage, Peppers, Onions & Pasta

This recipe stemmed from me trying to get rid of a bunch of peppers in my fridge that were about to turn- it's now become a staple in our home! Make sure you have some bread around to get all the saucy goodness up.
Ingredients:
> 8 ounces uncooked pasta
>1 pound Italian sausage
>1 tablespoon olive oil
>1 medium onion, chopped
>2 medium bell peppers, chopped
>1 tablespoon butter
>3 garlic cloves, minced
>1 teaspoon flour
>1 cup heavy cream
>1/2 teaspoon Dijon mustard
>2 cups packed baby spinach
>Salt & pepper, to taste
>Fresh grated parmesan cheese
Directions:
> In a large saucepan, cook the sausage, breaking it up as it cooks, and set aside on a plate lined with paper towels.
>In that same saucepan, add the olive oil and cook the garlic till fragrant, about thirty seconds. Add in the peppers and onions, cooking until softened, about five minutes.
>Add the butter, and once the butter melts, sprinkle the flour and stir until it is fully incorporated.
>Stir in the cream and Dijon mustard. Turn off the heat.
>Add the sausage back in as well as the spinach. Mix everything thoroughly. Add in salt and black pepper to taste.
>Cook the pasta according to package directions, but before draining, save about a 1/2 a cup of the pasta water. Add a bit of the water to the sausage mixture to loosen it up a bit- just add as desired.
>Strain the pasta, then toss pasta and sausage mixture all together.
>Sprinkle with parmesan!
