I crave Mexican street corn, like, badly. I can always tell when it's been made recently with fresh ingredients, or if it's been sitting around and had mediocre ingredients. This recipe includes fresh corn, fresh ingredients, and all the new friends you're going to make because of how delicious this corn truly is. Here are my secrets:
Ingredients:
> 4 ears of husked corn
> 1/4 cup of mayonnaise
> 1/2 teaspoon chili powder
> Juice of 2 limes, freshly squeezed
> 1/4 bunch of cilantro, roughly chopped
> 1/2 cup freshly grated cojita Cheese
Directions:
> Grill the corn. I like to de-husk the corn, roll it around in fresh butter, salt and pepper, then wrap two at a time in aluminum foil. Bring your grill to 400 degrees. Cook for 10 minutes, then flip and cook ten more.
> Mix the sauce. Combine mayonnaise, chili powder and lime juice.
> Once the corn is done, brush the sauce all over the corn. Yes, it will be messy. Lick the fingers.
> Set the corn on a pretty dish and sprinkle generously with cojita cheese and cilantro. Enjoy on it's own, or as a side for stuffed peppers!
