Any-Way-You-Wanna Fritatta

Fritatta is a new obsession of mine- throw any meats or veggies that are about to turn into a beautiful, delicious, fritatta!


Ingredients:

> Large cast iron

> One dozen eggs

> 1/2 cup Greek yogurt

> 1/2 cup shredded mozzarella

> 1/3 cup feta cheese (you can use other cheeses as well)

> Olive oil

> Salt & pepper

> Any fillings you want (I'm a broccoli gal, but you can do any vegetables, any meat, anything!)

 

Directions:

> Preheat the oven to 425.

> Ensure your cast iron is seasoned well.

> Chop up whatever veggies/meats you'd like in your fritatta. Cook in the cast iron with regular seasonings until cooked through- it won't continue cooking in the oven when the egg mix is added in.

> While your filling is cooking, whip up the egg mixture. Add the eggs, Greek yogurt and mozzarella to a bowl. Mix together thoroughly. Season with a little salt and pepper. Set to the side.

> Once your filling is cooked, turn off the heat. If most of the olive oil cooked off, add a little more and spread it around with your filling prior to adding the egg mixture. Add the egg mixture. Top with feta. Throw it in the oven for 15 minutes.

> After 15 minutes, the eggs should be set and not runny. Feel free to take it out now and let it rest for ten minutes, or broil it to brown the top for a couple of minutes, then take it out and let it rest.

> Slice it up like a pie, and enjoy!


(Keeps for three days in the fridge).




* Don't forget the hot sauce!
