Homemade Granola

I love granola. I love it the most when it's homemade. And, it really isn't that hard to make some delicious, homemade granola! It's so satisfying to control the ingredients and the amount of sugar you put in your own granola. Plus, when you take big bites of something you personally made, it somehow tastes 1,000% better. Give it a go!


 

Ingredients:

> 3 cups rolled oats

> 2 cups of roughly chopped pecans

> 1/2 cup unsweetened shredded coconut

> 1/2 cup pumpkin seeds

> 1/3 cup sunflower seeds (hulled)

> 1/4 tsp seal salt

> 1 tsp cinnamon

> 1 tsp nutmeg

> 2/3 cup melted coconut oil

> 2/3 cup maple syrup

> 1/2 tsp vanilla extract

> 1/2 cup dried cranberries

> 1/2 cup dried blueberries


 

Directions:

> Line a sheet pan with parchment paper. Set the oven to 275 degrees.

> In a large bowl, add the oats, pecans, coconut, pumpkin seeds, sunflower seeds, salt, cinnamon, nutmeg and set aside.

> In a medium bowl, combine the coconut oil, maple syrup and vanilla extract. You will see separation.

> Add the wet ingredients to the dry about one third at a time, incorporating thoroughly after each time using HANDS or a WOODEN SPOON. Ensure each piece of granola has equal amounts of the wet ingredients.

> Press the granola onto the lined pan, making one even layer. Place the granola in the preheated oven and let it sit for one hour. It should be slightly golden and fragrant. DO NOT STIR. If the granola is golden and fragrant, pull it out of the oven and let it sit until it is room temperature. If it is not yet golden and fragrant, keep it in the oven, checking every ten minutes.

> Once it is room temperature, remove with a spatula into your container of choice. While adding it to the container, layer in bits of your dried cranberries and blueberries.

> Serve with yogurt, on top of pancakes, mixed in with oatmeal, served with a smoothie, or just grab handfuls of it on it's own! Enjoy!
